RECIPE: Easy One-Dish “Fried” Chicken

If you’re like me (and I’m guessing I’m probably with the majority of those of you who are busy working women and/or moms)…there is probably no question I hate more than…

WHAT’S FOR DINNER?? (insert expletives here)

I think I’m a pretty good cook…an imaginative and creative one at that…BUT when you’re stuck with T-20 minutes to get dinner on the table in between everything else we have going on, having quick, simple and HEALTHY recipes the whole family will enjoy is key!

Here is a quick one I did earlier this week..it’s what I called “Mock Fried Chicken”…and who doesn’t love fried chicken!

And it takes all of about 10 minutes to prep, one dish…then put in the oven…and done!

We did this video on Periscope…if you’re not familiar…it’s sort of like “LIVE TV” streaming online (on the app)…so there are no “retakes”…and the people I’m talking to are the people who tuned-in LIVE!

MOCK FRIED CHICKEN

*NOTE: this is one of those recipes you really can’t mess-up! Feel free to get creative with the ingredients and amounts!

4 chicken breasts
1 tsp garlic powder
1 cup plain Greek yogurt (I prefer full fat for recipes like this)
1 TBSP dijon mustard
1/2 cup grated Parmesan cheese
Black pepper

Mix all ingredients and spread over chicken in a baking dish at 375F for about 45 minutes until golden brown.
